Pickled Peach Salad

Servings 1 person


  • 1/2 cup cucumber peeled and sliced
  • 1/2 cup cherry tomatoes halved
  • 4 wedges pickled peaches sliced into chunks
  • 1 1/2 tbsp peach pickling liquid
  • 1/2 tbsp olive oil
  • salt and pepper to taste
  • 2-4 leaves basil


  • Combine cucumber, peaches, tomato, salt and pepper and pickling liquid. Refrigerate for 30 minutes or until ready to serve.
  • When ready to serve drizzle with olive and garnish with basil.


The veggies will start to discolor (turn pink) if marinated too far in advance.
