1 1/2plums pitted and diced reserve other 1/2 for garnish

1/4cupwater
2striporange zest
2sprigthyme
Plum Gin and Tonic
2ouncesgin
1ounceplum syrup
4-5ouncestonic
plum slices, orange zest, and/or thyme for garnish
Instructions
Plum Syrup
Add all of the ingredients to a small pot. Place over high heat until it comes to a simmer. Reduce to low and cook until the fruit begins to break down about 15 minutes. Remove from the heat and pass through a strainer. Cool before serving. Store in the refrigerator.
Plum Gin and Tonic
In a glass, mix the gin and the plum syrup. Fill the glass with ice. Top with tonic and stir. Garnish with plum slices, thyme, and/or orange zest.
