The majority of people probably aren’t used to eating raw pumpkin. It is a hard, starchy fruit that most often requires boiling or baking. But when shaved, shredded, or spiralized, the pumpkin’s texture becomes crisp and light. Perfect for salads or slaws, like this one.

To shred the pumpkin and apple for this slaw, I used a mandolin slicer with a julienne blade. A food processor, spiralizer, or box grater will work just as well. A food processor can also be used for shaving the brussels sprouts. To keep the apples from browning, shred them just before mixing the salad.
The craisins in the slaw add a sweet-salty bite from the bourbon vinegar maceration. The pumpkin seeds give it a spicy candy crunch. And the orange dressing brings all the fruity flavors together in this fall slaw.
Pumpkin Apple Slaw
Ingredients
Macerated Craisins
- 1/4 cup bourbon
- 1/4 cup apple cider vinegar
- 1/2 cup craisins
- 1/4 tsp orange zest
- 1/4 tsp salt
Black Pepper Honey Pumpkin Seeds
- 1/4 cup pumpkin seeds
- 1/4 tsp orange zest
- 1 tsp honey
- 1/8 tsp pepper
- 1 pinch salt
Orange Dressing
- 1/3 cup orange juice
- 1/2 tsp orange zest
- 3/4 tsp salt
- 1/8 tsp pepper
- 2 tsp apple cider vinegar
- 4 tsp honey
- 1/4 tsp mustard powder
- 1/4 cup vegetable oil
- 1/4 cup olive oil
Salad
- 1 1/2 cup kabocha pumpkin peeled and shredded 1/4 each
- 1 1/2 cup gala apple shredded 1 each
- 1 cup brussels sprouts shredded 6 each
- salt and pepper
Instructions
Macerated Craisins
- In a pot combine bourbon, vinegar, salt and zest. Bring to a boil over medium high heat. Dissolve the salt and add the craisins. Cook until almost all the liquid has been evaporated. Remove from pot and cool.
Black Pepper Honey Pumpkin Seeds
- Preheat oven to 350 degrees. Line a sheet pan with parchment. Mix the Seeds with the rest of ingredients and spread out on the pan. Toast in the oven about 8 minutes. Allow to cool on the pan and break apart.
Orange Dressing
- Using a hand blender mix all ingredients except oil. Slowly add the oil in a thin stream while mixing.
Salad
- Combine all of the veggies with the craisins. Add dressing and salt and pepper to taste. Top with pumpkin seeds and serve.
